Valpolicella Ripasso
DOC Classico Superiore
An intense suby-red wine with aromas of underbrush, sour cherries and plums; on the palate, it has a robust and complex body that stimulates the olfactory sensations.
Gradation: 14% vol.
Format: 0,75 L bottle.

Corvina, Corvinone, Rondinella, Molinara, Oseleta
Grape harvest
Manual harvest (first ten days of October).
Vinification
A wine made using the "Ripasso" method, this process consists of re-fermenting Valpolicella Classico on the marc of Amarone and Recioto to acquire additional aromas, colour and body.
Maturation
Matured in 26 hl oak barrels and then in the bottle.
Service
Serve at a temperature of 18°-20°. Uncork at least one hour before serving.
Pairings
It goes wonderfully with a savoury dishes, grilled mixed meats, roasts and medium-aged cheese.
